I will be the first to tell you that I do not like to hang out in the kitchen every day and night for hours. Occasionally, yes, but on schools nights when the kids and I are on the go and tired from the long day, I want something SUPER easy. About a year ago, I started cooking up 2 cups of Quinoa at a time to have on hand for just those times. I can take a scoop here and another one there and add what I want to it. My kids like it with marinara!!! I made it last night with cucumbers, tomatoes, red peppers, and added a Balsamic Vinaigrette. Quinoa is a great base for any dinner. Delicious with spinach and strawberries as well as ground turkey with salsa (recipe to be posted later!!!) Packed with protein and delicious either hot or cold. My boys even requested it for their snack at school today!!!
I am so excited about the upcoming school year. Not only are my boys back in school and I get my days back to myself again, but I have all ready started working along side our local schools. I am working with the teachers to grow gardens in their classrooms. Last year, I did a trial in my son’s kindergarten class and it went over so well, that it has started to spread across the district. Kids really do eat what they grow.
This year, I am working closer with the teachers to integrate this amazing experience into the curriculums. From starting the seeds, caring for the gardens themselves, to drawing photos and noticing the daily changes. Everything from calculating the nutrients to learning about your 5 senses are lessons to learn with growing your own food. The best part, the kids start eating healthy greens!
So as everyone else is harvesting their outdoor gardens, the kids in the elementary schools will be starting their seedlings and watching them grow. The excitement and passion I see in the kids as they learn to grow their own food is overwhelming. Check out my "Garden's in Schools" page for updates throughout the school year.
