I had to share the fun photos from Excelsior Elementary's 3rd Grade Classroom! They just had their first harvest and the kids were UBER excited when I told them they were going to grow their own produce. This is the most enjoyable part of my "job", if you can call this a "job". It is too much fun and too rewarding! I love the curiosity and open mindedness of the students on eating the produce that they grow! I feel so fortunate to have been invited into the schools.

Stephen Ritz and the Green Bronx Machine are so inspirational!! What amazing things he is doing for the kids in school and their community. Check out the teachers and their gardens at my local schools... one small step that make BIG impacts!!!
I will be the first to tell you that I do not like to hang out in the kitchen every day and night for hours. Occasionally, yes, but on schools nights when the kids and I are on the go and tired from the long day, I want something SUPER easy. About a year ago, I started cooking up 2 cups of Quinoa at a time to have on hand for just those times. I can take a scoop here and another one there and add what I want to it. My kids like it with marinara!!! I made it last night with cucumbers, tomatoes, red peppers, and added a Balsamic Vinaigrette. Quinoa is a great base for any dinner. Delicious with spinach and strawberries as well as ground turkey with salsa (recipe to be posted later!!!) Packed with protein and delicious either hot or cold. My boys even requested it for their snack at school today!!!
I am so excited about the upcoming school year. Not only are my boys back in school and I get my days back to myself again, but I have all ready started working along side our local schools. I am working with the teachers to grow gardens in their classrooms. Last year, I did a trial in my son’s kindergarten class and it went over so well, that it has started to spread across the district. Kids really do eat what they grow.
This year, I am working closer with the teachers to integrate this amazing experience into the curriculums. From starting the seeds, caring for the gardens themselves, to drawing photos and noticing the daily changes. Everything from calculating the nutrients to learning about your 5 senses are lessons to learn with growing your own food. The best part, the kids start eating healthy greens!
So as everyone else is harvesting their outdoor gardens, the kids in the elementary schools will be starting their seedlings and watching them grow. The excitement and passion I see in the kids as they learn to grow their own food is overwhelming. Check out my "Garden's in Schools" page for updates throughout the school year. Almost a year ago, I made the leap and signed up to become a Health Coach through the Institute of Integrative Nutrition. I was fascinated to learn over 100 different dietary theories from a ton of brilliant people. Low and behold, after all the studying, I have found that my life has taught me so much. I have decided to focus my Health Coaching practice on helping women who are going through major changes in their life.
Over the past 10 years, I have had a lifetime of ups and downs. Not only, have I gone from 30 years old to 40 years old, I have become a wife, a mom, a single mom, the oldest living child in my family, then the matriarch of my family, an entrepreneur, and a student again.
For the first 5 years, I was living life like I thought I should. Working in Nuclear Medicine, getting married, trying unsuccessfully at first to have a baby, being blessed with 1 then 2 baby boys. Then I lost my sister. That day put a spin on the rest of my life. I realized that my life looked like a fairy tale, but I did not feel like I was going to have the happily ever after. I was not where I should be.
I learned a lot and changed a lot. I know that you can go from the happiest day to the worst with just a phone call. I also know that you can think you are where you are supposed to be in life and find out that you were way off and need to make changes you never thought you would do.
Being a Health Coach to me is not only about helping someone decipher what they should eat or how long they should exercise. Being a Health Coach is about being there for women and helping guide them with a compassionate heart along the stepping stones of their life. One little step at a time.
I am very excited to announce that I have partnered with Transform Integrated Wellness Center in Minnetonka. I will begin taking clients at this location in September.
