I will be the first to tell you that I do not like to hang out in the kitchen every day and night for hours. Occasionally, yes, but on schools nights when the kids and I are on the go and tired from the long day, I want something SUPER easy. About a year ago, I started cooking up 2 cups of Quinoa at a time to have on hand for just those times. I can take a scoop here and another one there and add what I want to it. My kids like it with marinara!!! I made it last night with cucumbers, tomatoes, red peppers, and added a Balsamic Vinaigrette. Quinoa is a great base for any dinner. Delicious with spinach and strawberries as well as ground turkey with salsa (recipe to be posted later!!!) Packed with protein and delicious either hot or cold. My boys even requested it for their snack at school today!!!
